The 9kg lamb with the two chickens that will be stuffed inside it. I'm peeling the hardboiled eggs that will go inside the chickens.
The box on the right holds the stuffing made from rice, pistachios, cashews, sultanas and flavoured with baharat and tumeric.

The cavity is then held together with poultry skewers and the legs are tied.
After two hours in the oven at 180c/350F the lamb is basted with pan juices and a mix of rose water and saffron. Then back into the oven for another 3 hours.

Plenty of leftovers. We'll be having lamb salad/risotto/sandwiches/rissoles for days.....

The khouzi was served with fattoush, tabouli and roast vegetables.
